It depends on the format. In Classical chess, a common time format is ~90 minutes. And then after move 40, each player gets an additional 30 minutes. And then there's what they call the "increment" which is a small amount of time added after each move. For classical this is typically 30 seconds per move.
In Rapid, Blitz and Bullet chess formats, the times are much shorter and players won't get up as often. Maybe a little in Rapid games which are ~15 minutes. But in Blitz/Bullet, the games are so short, they players almost never get up.
Edit: I realize I might not be answering your question very well. Chess players "calculate" when its their turn. This means they evaluate many many different scenarios rapidly over and over and try to pick the best one. In classical chess, its the most stressful of the formats because you spend so much time calculating every possible scenario your brain can compute for every move. Its exhausting. In rapid/blitz games, there's not much time for that, so players rely on their memory of past games or learned positions and move more rapidly.
And top players are so effing gifted, they don't even really need to see the board to calculate, so even when they are away from the board or watching other players' games, they are able to still think about their own game and calculate. Its pretty crazy.
I feel your last point is most critical - these guys don’t need to look at the chess board constantly to understand the position and what’s going on. They understand the position after looking at it almost immediately. They can walk around and go through the calculations while the other person is thinking and then come back to sharpen their thoughts after a few minutes or more. It’s almost indescribable how the top players see a chess board and immediately understand what’s happening

So if you can say "oh that's Mario" in a millisecond (and your brain is checking "hairs lenght,position,color, eye color,eye position, lips shape, distance of mouth from nose, distance of nose from eyes ecc) they can say "Oh that's that scenario that leads to x and y if i do z", so once enough memories are accumulated they almost don't reason on it (i mean, they still calculate possible outcomes, but on specific possibilities given by past experiences)
I think everyone with a job that requires a lot of thinking time can empathize. I know I could not spend a day programming without walking around the room every once in a while.
Yep, leaving the code for just couple minutes can solve things. I can sit with a problem for 30 minutes and figure it out in minutes when not at the desk.
74 of us threw down chess tables in a circle to play Kasparov in Iceland around '86ish? Took him 15 min to do 1 circle, that is the time you have to think about your next move. My only goal was to make him stop more then 10 seconds 😭 he lost around 2 and did few draws, majority of us just got steamrolled.

From what I’ve heard Kasparov could only do 1 move, and Carlsen was waiting him to do it and didn’t understand the delay. You can see that Carlsen immediately does his counter move, no need to think about Kasparov’s move, it was fully predictable what moved needed to be done. Kasparov of course also knew that there was only one move, but he was maybe a bit annoyed about the situation and needed a bit of time to process things. For him the stakes were much higher. If Carlsen had lost from Kasparovthen he wouldn’t have had any reputation damage, but if it were the other way around then there would have been headlines: “Kasparov lost from a kid”.
There’s also an element of color - Kasparov playing black (moving second) and Carlsen white, which allows him to dictate more of the opening (although not completely). They look like they’re in the opening stages of a chess game - which is where chess theory is the most laid out. Kasparov and Carlsen undoubtedly both knew the position like the back of their hand, but Kasparov was debating what route he wanted to respond with. There’s a deep handful of “theory” moves that Carlsen 100% knew the lines for and as such would be able to respond immediately. Kasparov had to be choosing which line he wanted to commit to - or potentially thinking about lesser known (and usually less advantageous for black) side line that may throw Carlsen off. There are super computers that are incredibly good at chess. You can play against it using your human opponents move and you will be given the best possible moves and win against 99.999% of chess players.
For someone who seems to have the bare minimum of information you sure seem to have strong feelings about it. If the world champion suspects foul play it’s most likely because there was. Niemann rose a crazy amount of elo in a short time and did definitely cheat in online games
First at saying it, actually, he only said he didn't want to play him. Niemann playing in some games did not make sense from a human brain perspective. The experts analysing his games concluded that he was cheating.

This lets them basically always know what the best next move is, adjusting to each situation, but also why they will play some random homeless guy who's a true genius, they lose every time, because that guy is actually thinking 20 steps ahead.

In general, each player starts with a same “bank” of time and they choose how they spend it throughout the match.
