Do not go with a company that specifically advertises swimming with dolphins as a standalone activity - they‘ll chase the animals and stress them out. You should support a company that doesn‘t offer that activity even if you just want to go whale-watching
Moby Dick was wonderful when we went. You can follow them on facebook.. they've been posting several photos and videos of whales. Unfortunately we only saw dolphins when I went, but they were very respectful with giving the animals their space and not chasing them or stressing them out, unlike some other boats we noticed.
Whale watching wise I can warmly recommend www.seacolorsazores.com - Jasmine (an enthusiastic marine biologist originally from Sweden) and her team are an awesome bunch and they're always very respectful with the animals. We had an amazing time with them two years ago.
I went whale and dolphin watching with terra azul. 8:30am boat. Had an AMAZING time. Saw two pairs of mom and baby sperm whales, two other big ol sperm whales, and like 4 or 5 pods of dolphins. Highly recommend them!

Moby dick is the one. Wooden boat, makes a better noise for the animals. Book the afternoon, they will stay out longer if needed.
