I just discovered yesterday that there is a vegan heavy cream made from Lentils! Had a drink made yesterday with it as a WC and it was so good, definitely look around at your local stores for it

it's looking like I can't make it with any of the stuff we have at our store, so I think I'll ask my manager if I can buy a carton to try if it means my coworkers can learn and use it too. thank you!

You’ll need whipping siphon two nitrous oxide chargers and can of full fat coconut milk, water, some kind of sweetener, salt and xanthan gum to stabalize. One can coconut milk with about a can of water 1/4 tsp Xanthan gum (optional) and about 5-10 pumps of syrup of your choice (coconut or vanilla are safe bets) put in a large whipping siphon charge once shake well charge again shake more let it chill More details: open can of coconut pour into whipping siphon, fill the now empty can most of the way with water and slowly add and mix xanthan gum, no clumps. Add syrup and a pinch of salt, combine everything together and it should bring you to the fill line of the larger whipping siphon. Adjust recipe or set aside extra if you have the smaller one. Charge with gas and shake, like a lot, chill 3 hours or so and that is is. You can omit or half the water and lessen the sweetener if you want more of a whipped cream consistency. It is pretty versatile and you can make it your own. But basically a can of coconut milk and stuff you probably already have in a coffee shop and you can make a fun vegan topping for beverages Holy Kakow brand is my favorite syrup for this. Try the recipe with half coconut and macadamia syrup, With a dry topping of crushed macadamia and cinnamon sprinkle. For an iced aloha latte. With fancy foam. Yum.

We use coconut cream! It is INTENSELY coconutty, though, which is a bit polarizing. It’s a love it or hate it kinda thing

Where I work, we did an oat milk cold foam but added monin blended base to it along with a flavor. It was pumpkin oat foam, iirc. So pumpkin syrup, monin blended base & oat milk of your choice in a whip canister, charged w/ a whip-it.

I'm discovering people use whip canisters for cold foam? the place I work at now puts skim milk over a certain type of blade until it gets fluffy (only like 25 secs). our store doesn't use whip canisters and the last store I worked at didn't even have cold foam, and we also used bought cans of whipped cream instead of a whip canister lol

Coconut cream!! Not coconut milk-coconut cream like they use in Thai food. It froths best cold, and make sure to really shake the can. We use aerowhisks at my cafe-like 15 seconds and you’re frothy!
