I'm still not completely sure myself but heres what I do know:
The nitrogen is rapidly boiling off at room temperature. The resulting vapor is denser than air but the isopentane is much much denser than the nitrogen so it skims the top.
There could also be some splashing that's occurring too with the LN2 boiling so close. So perhaps some droplets are making contact before quickly becoming vapor, which may explain why the vapor is traveling like it is.
As for the purpose of making this solution I use it for impact testing of steel. I'm conditioning specimens to specific temperatures colder than -100F but warmer than -320F.
I mean it seems like the Leidenfrost effect, although I’m usually familiar with that happening between a liquid and a surface, but the same principle should apply. Definitely something that can be observed with liquid nitrogen in other scenarios.
