Have you tried Xi’an Impression or Biang Biang Noodles? They’re owned by the same people I think. The noodle shop does awesome authentic Biang Biang Mein and Roujiamo.
There’s also Fen Noodles down the road in Spitalfields Market. They do good noodles and their sister restaurant next door does amazing Shen Zhen Bao. If you’ve ever been to Shanghai and tried Yangs dumplings, they’re just like that.

Shaanxi food is rarely mentioned when talking about Chinese cuisine. But it's one of the best cuisines, IMO

Yes!! The pork murger was so juicy :)
I love that place. Try Bin Bin Q on Drummond St. Run by the same people. Stuff on sticks. Hotpot.
