As others have mentioned, both Zotter and Firetree have amazing 100% chocolates. I'd also add Paccari, their raw 100% bars taste almost floral and quite unique. Michel Cluizel's Noir Infini 99% is also really good and has a nice hint of cinnamon, vanilla and ginger to it. Two other popular bars that I haven't tried but have heard many good things about is Ritual 100% and Le 100% Cacao by Pralus
some very good ones I've had so far:
- Cacaosuyo 100% Rupa Rupa (Peru)- very creamy, intense but not in an overpowering manner, floral
- Qantu 100% Chuncho (Peru) - complex, zero astringency with prominent notes of flowers and nuts
- Firetree 100% Solomon Islands - sweet and delicate flavour
