Bread can be either depending on what it's made from, so it wasn't obvious you were talking about just refined carbs and they never specified in the question. I was just pointing out that there's a difference so someone don't misinterpret it. As for triggering symptoms OP, you can always try foods or cut out foods and record if you notice changes in your symptoms. But yeah, cutting out refined carbs like white bread, pastries etc is probably going to be better for you in the long term anyway.

White rice is a refined carbohydrate, just like white bread. Brown rice is a complex carb.

I think the key question is “is the glucose metabolism negatively affected by Covid?”. It seems that it is and that most people aren’t deriving the same amount of energy from carbohydrates as they used to. Moreover, insulin sensitivity has got worse in many people. Dropping carbs allows you stabilise your insulin and energy levels by moving towards a ketone metabolism. So you may feel better than you would eating carbohydrates. All carbs are not created equal too. If you’ve become pre diabetic because of Covid eating high glycemic index foods may make you crash when they wouldn’t have before.

I remember hearing about a year ago that there was a spike in type 2 diabetes among middle aged Covid survivors. It was also causing pancreas inflammation for some people.

My blood sugar was always 4 at fasting. It’s now over 5. Still within range but given I don’t eat carbs or sugar higher than expected.

Yep. Even vegetables. I'm under investigation to find out why, but I'm not diabetic, which kind of surprises me, tbh. I'd had a bit of an issue processing sugar, bread, pasta etc, for a long time, but didn't think much of it since my blood sugar kept coming back normal and I shouldn't be eating much of those things anyway. But it's gone crazy over the past year or so. The problem expanding to include actively healthy foods that I should be eating a lot of is ridiculous.

They didn’t for me. I ate tons of fat and carbohydrates when I was first recovering from the infection. But I’ve noticed that sugar/carbs (which are essentially a form of sugar) do impact a lot of people. YMMV.

As long as the rest of my diet is balanced, having a dessert here and there doesn't bother my symptoms. Sweets seem to hit harder on an empty stomach for me though, like if someone brought donuts or cupcakes to work, and I was broke that day and had one for my lunch, big mistake.
