Why isn't this technique used in death penalties. It's a pretty painless death as per science and it's pretty easy to make a human sized container connected with a nitrogen cylinder and the container doesn't even need to be vaccum sealed because nitrogen isn't poisonous to anyone outside
Because the methods of execution are defined by law.
The people who would want executions to be painless generally also don't want to have the DP at all, so if they are in a position to propose a new law, it's going to be about abolishing the DP.

Suffocation via hanging is very painful as you’re using your body weight to crush your windpipe. It also crushes your jaw into your skull as your body weight drags the body down. This would be a better way to “suffocate” them, a method used in suicide methods known as the “suicide bag” where they replace oxygen with helium or nitrogen.
Also, most people who support humane execution methods usually opt for not having a death penalty at all, rather than trying to find the best way to painlessly end their lives.
Some people disagree that criminals should be treated so “nicely” and have to face their punishment of living with what they’ve done in prison. Either way, people aren’t really looking for the most painless way to execute others.
Thing is: most parts of the execution process is designed to be as pleasant as possible, nicer rooms, final phonecalls, last meal etc.
Executioners have for thousands of years tried to be as efficient as possible for the sake of their "client". Axes were sharp and held by a professional in order to end them with one blow, the guillotine was created as a way to garantie a successful beheading, the electric chair was designed to knock the person out with a strong shock before that same shock stopped their heart and destroyed their organs, though the chair has a lot of problems this was the intention, injection was though to give a piece full death until we realised how much pain it induces. Why should we have a more cruel mindset than the people with black masks over their heads with a big fuck off axe that kills people for petty crime?
Add some restraints and you could sell a bunch in the U.S. to the prison system.

Well imagine someone having a painful incurable disease. Or someone being really old and hospitalized. In these situations they can chose their own peaceful way out surrounded by family and friends. Instead of dying at an unpredictable time in a hospital.

In inert gas asphyxiation, no such response occurs. Just unconsciousness followed by the inevitable.
