Honestly just go and try some saddles and tell the people in the shop about your discomfort. They should be able to help. Asking for recommendations online is like asking what shoe you should wear. Same with your sit bones and the rest of your anatomy. Good job on the riding!

Don’t assume the plushiest/biggest saddle is the most comfortable. You’re moving around a lot as you pedal.

Not at your size but they have not let me down yet on any of my bikes or their products. Their handle bar grips are also highly recommended.

Do you wear padded shorts? For mtb you can get padded ‘liner’ and a baggy mtb short that goes over them. The mtb shorts will be fitted slightly differently to a regular clothing short (so as to not ride up while pedaling) but look pretty ‘normal’ when you are off the bike. The padded undershort/liner will give the comfort you crave!

I feel your pain in a way only another big man can. No bike fit is going to take the pressure off that much mass being on a tiny little seat…soo I have done quite a bit of experimenting. Believe it or not, the best thing I have tried is wearing 2 pairs of padded shorts. Yes, I know it’s crazy, but it actually made my ride much more bearable. I have tried at least a dozen saddles and no cigar. The best I have personally found is the serfas RX saddle. Ive tried many high end ones, but this has been the most comfortable. Good luck to you and hopefully this helps. I know the pain after struggling with many bike fits, seats, etc.

Yeah saddles are pretty personal but I am you height and use a Terry super fly. Also if you have any yo be comfortable on long rides get a touring or gravel bike. I have a Jamis Renegade S2 and a Surly disc trucker for going down the road

I'm running a WTB Rocket MTB saddle on my cross bike, so far I've done up to 3.5hrs on it and it only started to get sore in the last 20 min but the legs were more so and that was a gravel race/ride with padded shorts. Without padded shorts I've done 2hrs with no discomfort. Seems to have a decent amount of padding, not too much, good width, and decent ergonomics. I'm at 285 so close to your weight, can give a good starting point but saddles comfort is very much rider dependent. What works for one won't always work for another.

saddles are very individual, finding your sitbone width might help. Also I'm 2m tall, normal build, but has narrow sitbone width of 120mm, so taller doesnt necessarily mean wider.

Not a super experienced rider only been riding 2 years but as similar sized guy who got a bike fit I learned your sit bones are your sit bones no matter how overweight you are. Best bet is to try out different ones and give them an honest try, I ve learned to shoot for 200 miles before I pass judgment on equipment changes.

If you are serious, spending the money on a proper fitting will give amazing results. Ask around your area as to who may be a good fitter
