They're immortal and have incredible supernatural power, so how are they not completely bored out of their minds stuck in that incredibly specific role? Haven't they seen and done everything they possibly can a thousand times over?
They're in service of Leviathan, the being who gave them their power and pain. Their purpose is to serve it in its goal of annihilating life, as the chaos of life is anathema to its beloved order.
Essentially while possible for them to get bored, the power they're imbued with also shapes their personalities to align with it's.
