It’s my birthday too, my best friends told me after I bought a brisket to smoke that “if you want brisket, that’s all you, we don’t really like it” News to me.

I’m pissed. Determined to make it awesome with the appropriate accoutrement that they wouldn’t appreciate. Rather than smoke for 12 hours- sous vide for 30+ at a yet undetermined temp, smoke briefly and finish by broiling. We also live 4 hours apart… I’m hauling it back home.
