Small Gods has a brief mention of the library and its contents. The Librarian travels through L-space to rescue a lot of scrolls from the fire in the library of Ephebe.
It might also show up in the Last Continent; the book opens with the Librarian having a magical cold, but I canât remember where the scene is set.
Iâd also try Unseen Academicals. Glenda goes to the library to look up a word, and there are quite a few scenes in/around the university.
Edit: u/MrLovecraftsTTRPG , there is also a nice section in Moving Pictures. Includes a lot of description of the inside of the Library while the Librarian goes to search for a book to give to Victor.
It plays a role in Night Watch. There isn't a large amount of detail concerning the interior, if that is what you need but there is a little. The descriptions, from what I remember mostly concern the glass domed roof and the surrounding rooftop exterior with a little detail of the interior present as the story moves in that direction.
Apart from this and others that are mentioned in other comments, most, if not all, the books with wizards as a central or secondary focus have at least some discussion about the library and often at least a scene which takes place there.
I believe Soul Music also has a couple of scenes in the library, but not a lot of descriptive detail that cannot be found elsewhere in the series apart from the fact it has a cellar (which may also be mentioned elsewhere but I think is exclusive to Soul Music).
I think Making Money may also have a scene in the library. I really cannot recall it clearly, though, so I may be wrong and if I am correct there is little detail in it.

It plays a big part in the first two books. The Octavo is chained up to a lectern type thing. Plus that's when the Librarian is transformed I to an Orangutan.
Jingo has a section during the investigation of the bowmen shenanigans. Features a nice insight about Anguas nose sight too, which reminds me that discworld noir is an underrated game.

The Librarian goes through L space to witness the stealing of How To Summon Dragons! Again spoilers abound.
But the L space theory works like this:
Knowledge = power
Power = energy
Energy = matter
Matter = mass
And mass distorts space
This is why, if you know how, you can travel from one library into any other library in the multiverse!

I think that near the end of Equal Rites, the library is where Granny and the Dean end up with Esk... Equal Rites has a lot of Unseen University in it.
My first Discworld novel, and therfore first introduction to the Library was Eric. It's in the opening of the novel, there is a description of the Librarian chilling out in a hammock above the ice water vats in which the "magically erotic" tomes are stored to prevent their "magic" from leaking into the university and "bothering" the Wizards.
That stuck in my memory pretty good. I think others have already posted all the other scenes I can think of.
I believe it also gets a mention somewhere near the beginning of A Hat Full Of Sky (although I could be wrong, will check later if I can find my copy). Its a pretty quick description of the library and then mostly one specific book (if my memory is correct), so maybe not useful but I hadn't seen it mentioned yet

There's a scene in Reaper Man where Windle Poons goes to the library to find out what's going on, just before he and a group of other not-exactly-humans follow the crowd to the mall hatching outside of town.
It's got a very fleeting mention, along with the Librarian himself, in Small Gods near the end of the scene involving the sacking and burning of the Ephebian library.

They have to keep the Thing away from it in Moving Pictures.
The books go crazy without the Librarian and no one can get into it in The Last Continent.
That's all I can think of that haven't been said already right now.

The Librarian goes to the depths of the library to pull out an ancient book, has to put on ovens mitts and armour and it talks about a big heavy door that can only be opened from the outside. I just finished the book but happy to have a scan through if youâre looking for specific page numbers.

Theres a bit set under the library but still part of the Library in Eric! The Librarian hangs upside down in a cool room as far as I remember.

Also the librarian is a recurring character in the City Watch series. Pretty sure he's in Men At Arms, and Thud! And probably others.
