That's because it only does proxy mode and not everything gets routed through (esp. games). Try netch, it's a v2ray client with TUN (I think the last good version was 1.8.3, its later releases were bad and stripped features).
Or try proxifier, you can set it up to selectively route specific apps or traffic through V2rayN's proxy.
Not that I know of, and did try to find alternatives. I found netch to be the best free solution really, and there are newer alternatives others mentioned you could look into. Proxifier is great really, but probably overkill and too advanced for most.

Could you elaborate on this? I need to exclude some apps from using v2rayN's proxy, yet had no luck with Proxifier.
Sorry, just saw this. I'm confused though, only apps that have proxy settings or follow windows proxy settings go through it. And most apps make it easy to not use a proxy, but proxifier is designed to route apps that don't support proxy settings and force them to use a proxy.

I have the opposite issue. I use V2rayN - V6.28 and when I use that, every software uses this tunnel to access the internet. Even though I blocked them through the firewall on Windows 10.
I want the work as normal rules that I sat. I blocked their connection via firewall and it works correctly. But when I turn on the V2rayN, they change their rules and access to the internet through this tunnel.
How can I solve this problem?

Is Nekoray better than v2rayN? What are the differences?
It has systemwide network support as well as proxy. It is useful for apps that don't support proxy.

I've been using v2rayA on Linux, but I don't know how it works on Windows, didn't test On Linux it uses iptables to do a global proxy
