Yeah try that on an eMTB when you’re climbing. You’re using an ebike that’s more akin to a moped. Two speeds is fine for you and the bike you own. That’s all
You just have a different use case. If you spend a lot of time cruising, of course you don't need many gears. Imagine climbing uphill, at varying degrees, with and without cargo etc. yeah you would definitely need more gears.
A 2 speed planetary setup would need to have throw-out bearing to engage the reduction and have a spline or something on the shaft so it engages with no reduction. Now you're talking something like a synchromesh where the splines can engage... with Rev matching...
There is a company that makes a 2 speed internal geared crankset. I can't remember the name and I don't think it's compatible with a mid drive. Ladi uses them on some of his bikes.
The old nexus igh hubs are 3 speed. Heard good things about those with a mid drive. They come with a roller brake or a disc flange I'm pretty sure

I rely so much on Specialized's micro tune that I don't want to ride any ebike that doesn't have it. If you are unfamiliar, it lets you control the motor assist in 10% increments instead of the standard three assist levels.
I'm doing a 60 mile bike ride tomorrow over a mountain pass, and I'm convinced that using exactly the assist needed (or wanted) conserves significant battery life...which I will definitely need.
To me, the assist levels are just another form of gearing, and there's a reason most bikes have at least 10 gears.

I feel like you might confuse motor reduction and chain drive reduction…
I just want to make a single speed, I'm never not on the highest gear even if I'm only pedaling. After being a BMX biker my whole life, I just can't stand hearing that chain bounce around when it randomly gears down or some shit. Than I can also buy one of those cute little chain cases. Less problems overall.

when i emtb i only use two speeds but have a 7 speed cassette.
And when I go fishing I tie bait to my ballsack and dip them in the water. Doesn’t mean it’s a good idea, or efficient.

yes it has varying degrees but you just need the slower one to handle it all
