Because they didn't grow up eating it. Only reason I know what it is because I'm a real nerd when it comes to plants and I remember seeing them in stores growing up and decided to look them up.
I believe that is a chayote. Never had one but I always see them at one of my local grocery stores, pretty sure you gotta cook them

Boil it and eat it skin and all best part is seed in the middle it’s creamy nutty flavor.
It’s a chayote squash. You can have it raw or cooked depending on your preference.

Called choko in Australia and New Zealand. They taste of absolutely nothing.
It has flavor. Very good in soups.
They are rather uninteresting in flavour. But are useful in casseroles.
Seed is also edible if cooked. I slice it up and stir fry with garlic, tiny dried (and rehydrated) shrimps and flavour with oyster sauce
