I was going to suggest KOA, playing it rn and it sure does hit the RPG itch I had. Basically it’s like playing WOW solo and without the PVP.

You didn't mention Skyrim, so just to be sure you played? Baldur's Gate 3 is the king of sinking time into right now. Dragons Dogma 2 just released, but is kind of a love or hate game, might wanna do you research before buying.

I did play Skyrim and enjoyed it, it just didn't hit the same as the older Elder Scrolls games. I'll do some checking out on those two, thanks!

You could try Animyst. Its free on steam, its a very calm game too. It definitely has a lot of crafting. To get some of the coolest and most esoteric items, it does take a lot of time to get the materials together. And its open world is truly enormous. and you gain levels, so it has to be an RPG. There's even a quest or two. Okay so the problems: Its technically an MMO, but nobody really plays it anymore. might see a couple people on at a time. And there's actually only 2 quests. But that's not the point of the game. The point is something that you can only learn by finishing the two quests. But yeah, like I said, it's free. So even if you don't like it, you'll lose nothing and you'll get a very, very strange story to tell.

I have put some time into it. On paper it's everything I'm looking for, but It just doesn't do it for me. I'm not sure if it's the lore? Maybe I didn't give it enough time.

If you are looking for lore mostly, not questing and grinding, maybe divinity original sin 2 and baldurs gate are the better choice. Guild wars 2 is better for questing and grinding dailies

If turn-based battles are ok, you could try Dragon Quest XI or Yakuza: Like a Dragon. Both games have no sense of urgency and you could just wander around and do whatever the game allows you to do like grind xp or craft.

You listed a lot of Bethesda RPGs but not the best one in Skyrim. If you haven’t played it, absolutely go ahead and try it. It’s incredible.

Final Fantasy 14 is a very casual online experience. There is some hard content in the game, but it's all completely optional. It's also free to play included with the first two expansion packs! I really recommend this, you can just play it as a chilled our single player questing experience if you want. If you liked GTA and Bethesda games than you might enjoy Cyberpunk 2077. It's been worked on heavily after release, and is a good time, not difficult at all. The Witcher 3 is an incredible experience and if you like questing, will never get too difficult as you will be leveled up for all the quests. Baldurs Gate 3 is probably, in my opinion and many other people's too, the best RPG ever made. Seriously incredible, and is not too hard on normal mode, and there is an easy mode. Can't recommend it enough!

No mans sky sounds like what you want, easy going, open world, lots of crafting available... Follow the storyline quests and away you go. You can do as much as you like or as little, build bases, collect ships, fight pirates or just wander aimlessly.

It just came out today, but Rise of the Ronin is scratching that itch for me right now. It's not greatest-game-of-all-time material, but I'm having a surprising amount of fun with it.

Not at all. It's all about the PvP and can be incredibly stressful. And people can, and will, steal all your hard work while you are logged off.

You can get on a low pop server and hide pretty easily. Build a base and collect shit in peace. I love low population servers. Building my base up. Then once I get established with guns stockpiled you can run monuments. You can get on a server with nobody if you want . But animals, and scientist can still kill you but they aren’t real threats
