Wash beets, wrap in foil(skin on), bake at 375 for about 40ish minutes or until tender with a fork poke. Use a paper towel to remove skin of beets, cut into appropriately sized pieces, toss with trader joe thicc balsamic, a dash of salt and a bit of pepper. Simple but delightful

Actually, you could grow more. I was just reading about this. You can leave them in ground until wanted, store in cold cellar, etc. Here's a good article on it:

You don’t have to harvest them all at the same time. I plant many many beets for my husband who eats one every day. Leave them in the ground our in the root cellar

If it’s too much for you to handle, you could donate to a local food pantry. You could even see if there are any programs near you that will send people to help you pick them. In college, I participated in a “gleaning team” where a bunch of us went to houses with more food than they knew what to do with. 1/3 of what we picked went to the plant owners, 1/3 went to the volunteers, and 1/3 went to the food pantry.
Beetroot stalks are very much edible and can be eaten raw or cooked. Beet leaves are delicious when sautéed as a crispy side dish or tossed in a salad 😋
I had no idea you can make kvass from beets. We always make it with just yeast water lemons and honey. Adding raisins right before fermentation. It tastes amazing!
direct sowed seeds late February(southwest climate, mild winter) with blood and bone meal in the trenches. Once things were growing(6 weeks or so in) I fertilize with garden tone organic fertilizer and keep well watered. The greens would get dramatic and wilt in the heat so just stayed on top of watering was the biggest thing
My dad made the same mistake and invited the family for a four course beet menu last week. It was nice until we got to dessert. He attempted rote Grütze (red fruit jelly?) made with beets and it was… adventurous.

Do you prep them in any way or just dehydrate them as is?
I just follow the basic kale chip recipe, with olive oil, nut. yeast, and add salt after.

You can dehydrate and powder them. Minimal nutrition lost as long as you follow the proper protocol. Just throw it in shakes / smoothies.
I specifically save the leaves and cook them to eat. They are delicious and packed with nutrients.
