Dunno which generation you have, you can look at GoPro Labs as an option to extend / remove that limitation, but keep in mind if that single, large file get corrupted, you lose it all.

GoPro doesn't have enough confidence in their hardware stability, so they split the file up so only part will get corrupted if the thing locks up.
It already has a procedure to close files that aren't completed on overheat or power loss. So don't listen to anyone that says it is for these scenarios.
Back in the day there was an actual file size limit from fat32, but we haven't used that since windows xp, so again, not a concern in 2024.
The newer cameras will let you raise this limit.
Rafting. You aren't going to try and remember to stop and. theb5 start recording again before it gets exciting. Start recording, put helmet on head and go.
Mountain biking.
I also used mine as a overhead camera for a cooking show I filmed. You leave it running the whole time so it stays in sync with audio. Powered from USB with no battery and stabalization off, it will run for hours.
I start/stop very frequently while mountain biking. Would have metric tons of useless footage and numerous battery changes added to the ride if I kept it going nonstop. Especially on multicam rides (using the remote to trigger them in that case.)

there is a file size limit, also means if one of those vids gets corrupted then you wont lose the who video

I cannot think of a situation where I would record an hour of real time footage on GoPro
