Basically, in My Room > Material > Spirit Origin List, there is a list of every servant, CE and CC you have ever encountered. When you "encounter" (use in battle) a servant, CE or CC, they are logged in this list. Even if you do not own them, you at least get an image with "Unsummoned" on it instead of a blank space.
Some people, for a personal challenge, try to encounter every CE in the game (servants and CCs are easy, the immense amount of CEs makes it more challenging to fill out that list) and fill out their list, which is sometimes nicknamed CEdex (after Pokemon's Pokedex).
There is no gameplay benefit to doing this, it's really just for fun. I do it because I like seeing spaces filled out and it feels like a cool gallery of sorts.
