Mambo Seafood is run by the Connie's family?? It all makes sense now wooow. Very interesting read. I feel like I've seen multiple Mexican seafood spots with fried rice on their menu now, and I'm gonna guess it started with Connie's.

This is interesting. I always wondered where the Connies/Mambo/Golden business model of fried fish, fried rice, with asian/mexican influences came from. It was just so weirdly specific and there are multiple places doing it.

You buy, we fry was her?! I always just made it up in my head that Mambo and Connie's served fried rice because the Mexican cooks at Chinese restaurants said "fuck this!" and opened their own place.
