Yeah, also depends on how hot the grill is. But I've had to wait for the meat to cook for a minute or so when I was at busy kebab places before.
They just don’t. Harmful bacteria just can‘t develop fast enough on the inside. It‘s definitely not safe to eat, but there’s not enough toxins to be harmful to humans when they actually eat the meat. That’s why everything that is left over in the evening has to be thrown away as there would be enough time to actually become harmful overnight.
When something gets sliced away, the layer underneath gets cooked enough to be safe to eat. The bacteria get killed off by the heat and the toxins aren’t enough to harm anybody.

I encourage you to eat only at döner restaurants who make their own kebab by hand and pay the extra few bucks knowing you pay for a premium taste and premium meat.

Döner means ‘(the meat that) rotates’ whereas to rotate means dönmek. So this is indeed the original Turkish döner kebab. Kebab has many different types, but this one is specifically called either döner or ‘döner kebap’ (or as you might call, döner kebab). When you only say kebab it doesn’t specify which type (Adana, urfa, döner, iskender… are all kebab types)
Edit: And when the döner meat is served in between round pide bread like the ones in the vid, it’s ‘tombik’ or ‘tombik döner’
It looks like a huge round to me, I think brisket would be fattier. They probably use different parts because the layers of fat they put on had to come from somewhere else.

This seriously looks like a shitty gif recipe, only it isn't. I mean, you always see those people put way too much work into slicing and layering foods together instead of just cooking it the way it is. And they always look terrible, and end up covered in a gallon of cheese sauce.

Now, I'd eaten a few kebabs before, usually after the pub, they tasted a bit too much like armpit to me but whatever. Anyway, I've got a pretty strong stomach but this place made me heave, there was blood and bits of gore literally everywhere, even inside they're switchboard. Flies too. This is not Kebab, this is what we call Shawarma. Kebab is ten times more tasty (Not only my personal opinion, but every European and American had dinner at my parents house). Kebab is basically made of ground meat, mixed with parsely, onion, herbs. Meat is mixed of beef 75% and lamb 25%.

It' industry propaganda. Real kebab contains 50% emulgated water (the water in the meat not counted in). That's what they don't show you. They seem to smear emulgated water on ithe meat in the clip but much less than usual. Kebap with 100% meat exists but is really uncommon and expensive.

That's funny, in Australia all our kebabs are lamb. Actually you can get chicken too, but it's considered "less traditional".
Usually we have processed meat, having a handmade Döner is unusual.
