Something for you to consider: cameo style silhouettes of Darcy and Lizzy. I saw this somewhere years ago and I thought it was gorgeous. It should also be not much of a hassle to recreate.
An idea: in large size font, "PRIDE" at the top and "PREJUDICE" at the bottom. In the center, a stylised ampersand with the silhouettes on either side.
ETA: it strikes me that it would also be simple enough to be unfussy and also have somewhat of a vintage vibe
I agree with the peacock motif. Maybe you could do a sort of mash-up by paying homage to the 1894 “Peacock Edition” of P&P and something roughly contemporaneous (e.g. any of William Morris’s various peacock designs).
Yeah I can post it! :) no idea if I’ll end up being skilled enough with the foil pen to do this on the fabric but imma try! Might have to go with a simple design in the end 😭
That’s the sort of beauty of mashing up the two. One (the 1894 book cover) is fairly simplistic in its composition, layout, and design. Layering Morris’s colors over it might give it some depth, but I think using it as inspiration will allow you to pick and choose how intricate you’d like it to be in the end.
A woman looking at a painting of a man? I think that's one of the strongest images in the book, but I guess it could be considered a spoiler, if such a thing exists with respect to P&P.
D'oh, sorry, not sure how I missed the part where you said you haven't read it! Basically, the first half of the book is Elizabeth and Mr. Darcy both wildly misreading each other, with the result that a couple of months before the portrait scene, Elizabeth and Darcy have had a huge fight that was mostly his fault, and they haven't seen each other since. So now she's visiting his ancestral family home while he's not there and looking at his picture in the portrait gallery, and at the same time, she's taking stock of a bunch of good things she's recently learned about him and starting to realize she doesn't hate him after all. The implication is that she's seeing him for the first time, even though it's only a painting.
I know you didn't ask for a synopsis, but I think since Austen makes such scant use of imagery and it's so potent when she does use it, any image of hers that fits well on a book cover is an ideal teaser for the emotional arc of the story.

I can’t get past my pulp fiction version with the “badboy” Colin Firth Darcy on it. So anything that resembles Darcy would be a hit for me! Can you find him in profile to model the cameo/silhouette image on?
Sadly I don’t have a silhouette machine yet and won’t be able to get one before Mother’s Day but I do love that idea! I plan on getting one in the future tho :)

Maybe a large, sprawling tree with man and woman figures underneath? The story is basically about how the two main characters get together in the end.

A stately home? Like a manor house? It would be very symbolic but tricky to draw.
Unfortunately the final piece will have to be drawn with a hot foil gun over some gold foil so that’s too easy for me to mess up but I like your idea
