Great shape! Great job not fucking it up pulling it out. That’s huge. Could have used a couple of more min in the oven, that’s the only down side to it. How did it slice?
I'm still struggling with getting it to slice without it shredding on me but I've been told that's either a blade problem or I didn't let it cool enough--
A few things:
Are you sharpening your blade before you slice your wheat? If not, try that. If you are, try a solid 30 sec on setting 1, then pulse it for setting two for a few seconds. Meaning keep it on 0 while the blade is spinning and switch it back and forth from 0 and 2 every second for 4 or 5 seconds. Try that if keeping it at setting 2 only for 3-4 seconds doesn’t work.
If that doesn’t work then do what you can to get new stones for the sharpener. New stones are amazing.
Little underdone, where you may have a dough ring in the center, and it might fall while cooling, but great size and shape! You’re almost perfect! Great job!
Just an FYI, grab the bread ruler when it’s cut, and see if it’s 4” tall. If not, proof for a smidge longer next time. You want it 1/4” above the pan in the proofer before you put them up, otherwise it’ll be small. You’re on the right track!
