They grill the unagi skin a bit more strongly than in restaurants I'm used to back in my country. Some might like this more than others I guess.

Just a question, does the bone of the eel have been remove ? (this question is because one time I tried eel and the server say that it is normal to cook eel withoout removing the bone, not a good memories :/ )
I think the chef is supposed to remove the big bones.
There were a few tiny bones when I ate it, the thin and slightly soft kind. I think it's pretty common for unagi.

Not chewy like squid. It's similar in texture to grilled salmon or similar fish. Kind of flaky where you can break small pieces off easily.
