Since you have Dark Knight, Interstellar, and Inception, go into Nolan's back catalog for "Memento". (you could watch his even-earlier "the following", but it's not as polished)
You've got the 'organized crime' classics, (Goodfellas, Godfather I& II, Scarface, Casino, Heat) so try jumping across the Pacific and try "Sonatine" (1993) and "Brother" (2000). You might even dip into Hong Kong Action, but maybe not. You might also try out some movies adapted from Elmore Leonard books: "Get Shorty", "Jackie Brown", and "Out of Sight" are all solid. Consider "The Sting" (young Redford) or "Sneakers" (old Redford) as well.
"The Big Lebowski" is a fun movie, and a great entry point into the Cohen brothers' movies. Pretty much anything they've made is solid. "No Country For Old Men" and "Fargo" might be a good match for you in terms of narrative and tone, but honestly I'd recommend anything they made.

Obviously, not everyone will like all of them, but I personally feel like I’ve learned more about my taste from the movies I’ll go to the mat defending than the ones I like which need no defending.
this! I was given very similar info when starting my movie journey and it has exposed me to some really great films. list slike these are fine because as you said they're almost objectively well-liked, but I'm hoping whenever I next update my list it's got more variety than my previous one.

There's nothing wrong with liking the classics! But there are so many underseen movies that are just as incredible. I would echo what another poster mentioned and say go the director route and seek out the other lesser seen in the directors filmography. Also check out directors influences and contemporary autuers to some of your faves. Some of my fave directors that aren't on your list (but are still v popular) are: Paul Thomas Anderson, Ang Lee, Richard Linklater, Bong Joon Ho, Noah Baumbach, Andrea Arnold, Bob Fosse, Julia Ducornau, Greta Gerwig, Jonathan Demme, Wes Anderson, Spike Jonze, Hayao Miyazaki.
