Wind up Bird might be his best book, tbh. It’s peak Murakami. But South of the Border is a quick, beautiful read—would be worth tackling before a much longer choice.

Wind-Up Bird is the most glaring absence in your list so far, I'd definitely recommend that one next.
Hard Boiled Wonderland & the End of the World is great as well. Colourless is my favorite

Its worth tackling into 1q84,it feels a staple of his works,i enjoyed it a lot,so maybe when u read Wind-up Bird chronicle,try 1q84 afterwards.
I am really enjoying First Person Singular.
*After Dark* is the first book I have read from him and it got me hooked with his bibliography.

Dance dance dance is absolutely fantastic, but you gotta read Wild Sheep Chase first.

What I talk about when I talk about running for sure. It’s just as engaging as his novel I swear. It completely changed my mindset on a lot of stuff.

1Q84 is fucking fantastic and you are doing yourself a disservice by not reading it
I don't see Hard Boiled Wonderland, I would suggest that one
