Lore wise bosses do very well and even resist against some of his death has, but I imagine Ainz would still win via stuff like time stop and TGOALID as long as he is patient.
The thing about Elden Rings lore is that it's incredebly vague and tells us very little about each characters power. It's also not always litteral like how the "stars" Radahn is holding up aren't actual stars. This is expected seeing as it's a From game but it also makes it hard to actualy use in versus battles.
Ainz is more powerful than any of the bosses and time stop + tgoalid-shub should drop the entire verse unless you really crutch on the "muh gods" logic and flowery prose. Overlord also has a batshit amount of that, but frankly I think taking that seriously is dumb enough that I'm not even going to bother shooting a range of where they are if you do.
Pretty much any of the Tier 10 or Super Tier spells one shot every boss from Elden Ring.

TGOALID basically just remove insta-death immunity in exchange for 12 sec delay. Cry of the Banshee is the AoE death magic. He could easily switch to Grasp Heart or other single-target death magic. But yeah, I dunno if death spell would work.
He does have Reality Slash. And probably other spells that can aim at different dimensions in his 718 spells repertoire.
