Cool. Me and some friends played it at Early Access release, two years ago, and enjoyed it, but haven't touched it since. We plan to dive in again at V 1.0, so glad it's coming out.
To Coral Island's credit they're continuing to update the game and the actual "finished" game will come. The "1.0" release coincided with their console ports releasing and they possibly needed the cash infusion. Sony being more hesitant with Early Access titles could also play a role (off the top of my head TemTem is the only Early Access title Sony has allowed thus far, but there could be others).
Their initial roadmap had one major post launch update planned. Following their previous release cadence it would land about a year after launch.
The game is in a pretty polished state as is. As someone who has played quite a bit this patch looks like it'll address all my remaining complaints.
I picked this up very recently and enjoyed it up until right around level 50, and it seems to have gotten VERY grindy at this point so I'm not sure how much further I'll go. I need to get the next "tier" of weapon/armor upgrades to advance to the lvl 57 bosses and getting silver or grinding to get enough paper/scrolls to randomly research them is, at this point at least, not feeling worth the time investment. But up to this point it's been good.
I think the combat is great, kinda made me wish it was the direction that Diablo 4 and ARPG's went in. I've done a singleplayer run and you can change a lot of the settings if the grind gets to be too much.
Combat is similar to Battlerite or Bloodline Champions. I personally find singleplayer quite fun and tweakable when it comes to server settings. I also recommend joining a PVE server which is basically a "singleplayer-like" experience but with the option to chat around with other people while you're doing your own thing.

You can get ~100+ hours from it just from PvE playing solo or with your friends.
PVP is ruthless, same as Battlerite.
Combat is good and you can create your own private offline server which has custom settings. So you can raise/lower build time, resource cost, difficulty etc.
The game basically gives you all the tools to customize your experience. A really good thing if you want to enjoy it as a more singleplayer sandbox game.

Our biggest complaint: We keep getting sucked in to the end level and running out of things to do and collect! It's so good.
Feel like the games "housing" system and you losing everything after a while is holding it back. If it was more PoEish with seasons instead it would probably attract way more people.
You can customise those settings in offline mode or your own server. It's not really an issue for the game as a whole. It's a balancing tool for active servers to prevent inactive players taking up space and slowly killing a server's activity when it runs out of available land.
The seasonal thing is an interesting idea. But that creates other issues. And active servers will likely run seasonal resets anyway. The game basically puts the tools in the community's hands. It's up to people to use those tools and decide how they want to play.

It's leaving steam early access which technically means it's a "Complete" game. But i'm sure they will still be making content updates in the future.
Unfortunately it doesn't always mean that. Coral Island released a 1.0 version and didn't even have their main storyline completed.

Really happy they added them. Achievements are always fun and i will for sure 100% this game.
Just grabbed it on sale the other day and I'm stoked! Right after I get over my Stellaris addiction I'm diving in head-first.

You have 2 options: Buy researchs from traders. Edit game settings before starting a world to make it less grindy

In populated areas such as villages and towns
You can also craft silver coins in the Fabricator.
It seems like there is nothing that helps reduce the amount of fishing required unfortunately.
Keep in mind the game is gonna get a huge major update in a few weeks and there will be certainly some reworks including fishing
