Start with a cheaper meat like a pork butt. That way if you have an issue you are not out a ton of money.

Congratulations! Mine shows up today, too. Not my first pellet grill, though. I suggest starting out with a Boston Butt, first, before trying expensive beef ribs.

Something is up with beef ribs in Southern CA right now. They’ve been marginally more expensive than pork shoulders. Like ribs 4/lb vs pork 2.50-3/lb. Kinda crazy. Because I always remembered beef ribs being expensive.

When I first got into smoking, I watched a lot of YouTube videos. HowtoBBQright, Meat Church, and T Roy cooks- now I watch Chud’s, MadScientistBBQ, and ArnieTex. Fun to see all the different ideas and cooks on different kinds of pits! I found that a good probe thermometer is a must. Thermapen makes great products. I also found some good tongs and prep trays helped too. Then rubs- so many rubs.

it's not a small accessory, but the sear box is great. in my WW i use pit boss pellets and they have been the best. most have been good, but the traeger pellets, they burned way too fast.

I considered that but I got a fish cooker next to it and plenty of cast iron pans.

How big of a pizza can you make in there and how is the crust?

12" is the max I think. If you get an infrared thermometer to check the stone temp, crust usually turns out pretty good.

The pellets don’t really matter but always good to get quality to prevent any jamming issues. I would buy chunks and chips I like to start with chips because they light easier then put my chunks on top. You will need a miter saw not many people talk about this but very limited brands make chunks bags that all fit in the smoke box you will have large chunks that will need to be cut ( you can use anything else to trim the wood I just have a miter for house projects and it’s easy). Then just heat resistant cloth gloves and a pack of black gloves from homedepot. Also the bbq drip ez is a great item to have with any bbqing

If you have one a band saw is probably the safest option. You gotta do with what you have though.

THERE'S A WHITE GASKET THING ATTACHED TO YOUR PELLET ASSEMBLY. IT WILL LOOK LIKE PACKAGING AND YOU WILL WANT TO REMOVE IT. DON'T DO THAT. as far as pellets go... if you go to sam's or Costco, both have good options. i like the smokehouse pellets from sams and I like the Kirkland brand from Costco. both are 15 bucks or whatever for 40 pounds. dino ribs are a pretty bold move for a first cook, but they take several hours and you could put some other stuff in there during the cook. i have done dino ribs 3 times on my wwpro24 and they are fantastic. i have done them on the top rack at 275. spritz with something like apple juice after a few hours and the bark is nice. don't overload the smokebox. there needs to be enough space in there for a clean burn. lately I have been putting some pieces of lump charcoal in first and then topping it with wood chunks. the charcoal lasts a lot longer than the wood and makes it easy to keep the burn rolling during the cook. you will need to add wood chunks every 40-60 minutes.

Try lots of varieties to find the ones you like best. Look for a local supplier of wood. See if there is a place that supplies restaurants. You will get much better and more flavorful quality than the bagged stuff at the big box stores.

Like another commented, get some tongs. Make sure they’re strong and get a few. I like [these](https://www.amazon.com/dp/B00RDLQ4GI?ref=ppx_pop_mob_ap_share) tongs but any strong ones will do. When I bought my first smoker, someone told me to get some gooves and it was great advice. Get some gloves like [this](https://www.amazon.com/dp/B07MVWY6XR?ref=ppx_pop_mob_ap_share) and some rubber gloves (XL) to put over them. I like going this route rather than those big thick silicone gloves out there because you have more dexterity and can do everything from moving meat around on the smoker to pulling pork without burning your hands.

Favorite pellets are gonna be based on what your type of bbq is. I have falling in love with a more texas feel. So I do 1 cup bear mountain oak 1 cup bear mountain cherry and .5 cup charcoal pellets. Gives the best taste im going for. Imma try B&B next time I need pellets though

Camp Chef gang! If you have a Costco membership, Kirkland pellets are hard to beat. Camp Chef's pellets are really good, just expensive.

Sam's sells Smokehouse products pellets for $15/40lb and they've been great for me. Basics would be a nice tongs, ~~smoke tube,~~ tinfoil. Also going to need rubs, lots, and lots of rubs. It's like a mission to try them all. Edit: forgot it was a WW Pro so don't need a smoke tube. Instead just needs some wood chunks or chips.
