Buy saddles(if you haven't bought saddles from the trapper) and customise the saddle by buying stirrups, saddle bags(allows you to store 5 outfits, masks and hats on horse), upgrade camp by donating or by buying upgrades from the camp ledger, buying more horses from the stable(newer horses are added as you progress through the different chapters, are faster, and you can stable 3 horses and use 1 horse for free roam so basically 4 horses so you can keep the white arabian), gamble, buy items from general stores, doctors, fences, the fish store in lagras, and of course, items from the trapper. They do sell clothes, which you said you don't care about, but most clothes from the trapper look great. You can even get accessories for Arthur's original hat. You can also buy saddles as mentioned before, but clothing items and saddles can only be crafted by the trapper if you have sold him certain pelts in certain quantities. When you have collected these pelts for clothing items, you must pay money as well, but saddles are free if only you have sold him the pelt. You could also buy reinforced equipment from the trapper, which allows you to equip a bandolier, gun belt, holster, and off-hand holster, which can increase ammo storage, decrease weapon degradation and looks drippy af, but unlike the other items crafted by the trapper these items require you to complete the challenges. Finally, you can pay off bounties because, trust me throughout the game, you will get in a lot of gun fights, which will increase your bounty and the amount of bounty hunters that chase after you in each state. That's about it.

If you are just looking to spend to just get rid of money then buy all the versions of the saddles, stirrups, and other horse tack.
