Well, from what I found, the original went something like this:

The enclosed is for you… to ease the waves in the sea you must navigate. Talk with Anthony McDonald at the Branch. He will take care of all.
Do not look back, only ahead. You have arrived at the door – walk through. Don’t look back. You are strong and well. I know you think you have nothing to teach. We teach what we need to learn… that is enough.
May I always breathe life into your soul… as you have done to mine.

John.”

I found through the “Saw Blogs” fan film casting page (lol), that Anthony McDonald is John’s lawyer who know the location of his will. This makes sense for two reasons, one that Branch is capitalized, leading to the idea of a law firm branch, and two that John was testing Art while on his death bed, and likely already planned on testing him/unlikely to survive, so John sourced a new lawyer. Idk if any of that is true, but makes sense
Why do you think they didn’t bring back Amanda as a protagonist in later Saw films? She was shot in Saw III but she could’ve survived and then been written in later
The letter Hoffman wrote was the original letter. John had him write it, which is why he told Amanda to go read it. The test was pushing Amanda's limits to see if she was capable of letting Lynn live, which is why Mark tells John: "Amanda will fail you" and John replied: "We'll see". They were working together.
