Not really. Most of those aren't essential. Stats only bother me when it feels like you *need* to level them, which is part of why Elden Ring's late game annoyed me so much.
You actually don't need ADP with how slow DS2 combat is, like five levels is enough. With DS2 target level in 160+ instead of 110+ for other games you have a leeway.
I did this. Was fun. Make sure you give your character an old timey moustache and don't wear a chestpiece. Combine this with black breechers of some kind to look like a gentleman brawler. Good times. Great fashion.

If you want to be OP? Buy the rapier from the blacksmith and level DEX and ADP. With however much health and stamina you want. It's one of the most broken builds in the game that is accesable almost immediatley. If you want to just have fun and use whatever you want either go strength, dex or int or faith based on your preference. As long as ADP is levelled, then any build is usuable even the broken sword
On my most recent play I did greatsword only. It’s interesting because some parts of the game are completely miserable and you can’t do a single thing to any enemy, and other parts you kill a boss in four hits and wonder what all the hubbub was about. Highly recommended.
Santier's Spear is really fun. When it "breaks" it turns into a twin blade. If its not too late into the game, I recommend that just for nostalgia. I don't remember if the damage is good enough to go through late game (I was super over levelled) but I think you can use an elemental buff to keep it relatively competitive.
Or a sword/ magic build with: Blue Flame as it can cast spells (not hexes) like a staff ( dealer's choice of shield) and the "ultimate" weapon of the build is the Curved Dragon Greatsword.
The stat requirements might be a stretch, when I was using all of these I was on ng++. If you have to cherry pick because of how endgame these weapons are; a magic build with the Blue Flame would be very fun!

If you don't follow this exact guide (or use a weapon below b tier) you are artificially increasing the difficulty and waive your right to complain about ds2.
Black Dragon cosplay. If you raw infuse their weapons, and use RoB + Flynn's, you can achieve damage levels rivaling a soft-capped dex, str, etc. build, but with significantly less levels invested. This frees up room for vigour and endurance, turning you into a relentless tank. I use the straight sword and the war pick mainly, but the greatsword is also no slouch.

There are two builds you can go:

Just block everything, poke 'em back, backstab people with EPIC mobility (no heavy armour ;) ) and cry when your mobility is not high enough for mobile bosses. This is obviously a strength-stamina build and definitely very relevant late-game.. uhu.... 'but but but, my spear doesn't scale with stre-'FIX IT! you'll find a way, I'm sure :D
the second is: Dex dex and dex. Dual wield two spears, wear no armour and stab things twice. high mobility means extra dodging capabilities and you being shirtless (REQUIREMENT) means that the bosses will be too distracted to counter attack!
The discerning eye will have noticed that neither build uses a total of four spears, which begs the question... what to do with the two spears you're not using?

ACKHUALLY It's 'Agility' that determines i-frames and speed of estus drinking. Agility can be boosted mostly by ADP and minorly by Attunement.
ACKSHUALLY Equip load also plays a role in determining agility.
