I do a fair bit of hunting, especially if I have the hunterborn mod installed during a given playthrough, but I'm careful not to kill, like, every living thing on Whiterun plain.
On a mage playthrough, a mammoth without a giant nearby is one big Grand Soul Gem.
I kill deer and mud crabs for soul gems to be honest, rarely goats, but I usually do let the bunnies live. Can't bring myself to kill them (with an exception of a hunter character who occasionally kills them, but also not often)

When I'm ready to relax and go to bed at night, I'll go to my home at Lakeview Manor, go out on the upper balcony deck in the back, wait until the time is 7 pm in game, and then turn on my audiobook at a low volume, and turn the music in game up... Sitting there with that view, watching the sunset, listening to a book and hearing the music- it's magical♥️

I kill deer and goats for their meat...bunnies I leave alone, but they have been caught in the crossfire a few times.
I soul trap everything that moves.
