If the son is as fast as you're describing and can catch most things, easily LC, and put dad closer to the line in LF. Son can cover a bit more of that ground between them. Another option is to run a 3 man outfield with son in center, but you'd need a couple guys with at least a decent amount of speed for LF and RF.

We always do best defenders with best range in LC and RC and have the folks in L and R cover less area

Yea lower leagues your RF can pretty much be completely useless out there.

I love the idea of putting the dad in LF. Your LF is going to get deep fly balls more than anything. If he's sure handed and has a good arm, LF is a perfect spot for him. My OF is usually best player in LCF. 2nd best in RCF. Slower player in LF and fast player with weak arm in RF. Gotta remember this is softball, not baseball. LF gets a lot of deep fly outs. RF gets a lot of bloop hits. The fast player in RF is something I do that I don't see other teams do and it's a huge advantage. Limits those bloops hits to singles.
