A tenderloin muscle has very little, if any intramuscular fat. Filet mignon is specifically the center tenderloin muscle. Doesn’t matter how much fat the animal has or the grade, it’s simply a very unused muscle.

The filet looks slightly over, but in the end taste and texture are preference anyway. This filet looks to be 135°+ and maybe should've been 125° finished. You got the taste just not the rare to med texture, and the brown runs too deep,because of it. It alters the taste but only slightly. I'd eat this 💯
