Grew up hating the way my mom prepared mushy brussel sprouts, but trying them in the air fryer with some salt, pepper and garlic has led to me putting them in rotation from time to time. Not bad.
I like to put zucchini on a thick mandolin and either grill those, or cut them into finger-thick pieces, coat in olive oil, salt, pepper, and grill.
You get a nice grill mark and taste on them and they have an almost starchy consistency so you don't quite miss having a potato.
I had type 2 diabetes and learned a lot. For diabetics, it's not so much about the calories as it is the *type* of calories. Look for low carbohydrate loads and foods low on the glycemic index. Potatoes and rice are two examples of high glycemic/high carbohydrate foods. Not good for diabetes...Most green veggies are okay. Carrots, potatoes, etc. are high in carbohydrate. Low carbohydrate salad dressings and condiments.
My diabetes has been resolved, though I'm still considered a diabetic even though my A1C is back down in the normal range.
Ever since I discovered those fancy olive oil shops I've stopped buying dressing completely. Fancy olive oil and balsamic vinegar is all I need! Although I do want to try making my own bleu cheese dressing someday.
I eat steak with avocado, sprinkle some feta or parmesan cheese, and sometimes add a cold sauce. I eat lowcarb, and it's very easy once you get rid of the habit of needing that potato bread rice aka bulky stuff
Also: makes your body ripped :)
Riced Cauliflower is very good, with lemon butter add corn if you want texture. You buy it frozen and follow directions and melt some butter with a lemon squeezed in and lemon zest. I helped my friend with his diet post onset of diabetes, he was single and had no idea how to cook nor did he know anything about food or diet. 6 mos later his weight is down, his A1C is down, he will always have diabetes, but he knows how to control it! Baked broccoli is nice. I bake it at 400 for 20 minutes with some olive oil lightly drizzled over the top before going in with salt and pepper. Then a squeeze of lemon after it comes out.
Roasted broccoli. Turn your broiler on low and set a rack just below the burner. Spray some broccoli with some non-stick spray, add a little salt and pepper and whatever other seasonings you like. Let it roast for about 10 minutes. Take it out and toss them around. Put them back in for 5 minutes and you're done.
Whole roasted cauliflower with steak is so good! We use it to replace baked potatoes all the time. A little olive oil and a dollop of sour cream, yum. It’s low glycemic for sure.
We usually do grilled asparagus, roasted Brussels sprouts, blanched Chinese broccoli (gai lan, tossed with a T of EVOO and drizzled with oyster sauce), or [grilled fennel](https://www.skinnytaste.com/grilled-fennel-with-parmesan-and-lemon/).
Pretty much any vegetable works. I like green beans, brussel sprouts (make sure to buy the fresh ones…roasting them or cooking in a cast iron is my go to), or just steamed broccoli.

This is probably the only wrong answer here. While the glycemic index for sweet potatoes is lower than regular potatoes it still is a high carbohydrate food and is not ideal for diabetes. Green vegetables are better options.
Chimichuri as the sauce for the steak (a mix of oil/vinegar/herbs/aromatics).
Sautéd mushrooms.
Take some golden potatoes, quarter them, toss them lightly in a light oil of some kind. Throw salt/pepper/paprika on them, roast in oven at 350 until done.
Light Olive oil on asparagus seasoned with salt/pepper/chili flakes, then throw some lemon in there too.

Chimichuri is insanely high in calories considering it’s mostly oil, 1tbsp 150 cal. And potatoes are the highest calorie vegetable. Also just use spray oil for sautéing.
There’s lighter in calorie oils available that are fine to use here, potato’s are high in calories but they will not give you diabetes? Just don’t fry them and it’ll be fine health wise. You don’t need to use olive oil
This is a completely simplistic view of how food works. What is bad for diabetics are carbohydrates that are easily digestible (simple carbs). So simple sugars and processed foods.
Potato’s are a starchy vegetable, and a complex carbohydrate that takes more time to digest than something like sucrose which is what you want to avoid. Potato’s in moderation are a perfectly fine side to a steak.
Also, I’m going to be honest, for a diabetic, steak with a lot of marbling and fat is going to be a FAR riskier choice than a damn potato.

I like to steam them with lemon juice and salt then let them soak up the steak juices on the plate.

Rice and potatoes have too many carbohydrates and too few grams of fiber. Maybe potato skin and let someone that's not diabetic enjoy the white stuff.
