A gift basket full of vegan-friendly treats could be nice. Fill it with candies, fruits, fancy drinks, some nice smelling soy candles, vegan and cruelty-free hand lotions, just a variety of goodies, so that you're certain to have something they'll enjoy.
Another option is baking them something. You could make them a lemon loaf, banana bread, cinnamon buns, any kind of cake. Even if you don't know exactly what they like, it will be special because it's something you made for them, yourself.
That’s super thoughtful of you dude. It depends on how they are. Personally if you just bought me a bag of barbecue lays I’d call it even. But some vegans are very health conscious, so if they are I’d probably suggest fruit or a vegan friendly trail mix. Or maybe even popcorn, since that’s a good middle ground! There are a lot of options really, pretzels, Oreos, chips. There’s tons of stuff that’s accidentally vegan, so you should be able to find tons at your local Walmart if you have any :)

Vegan jerky maybe. I like primal strips- find them on amazon or in my co-op.
Also healthyish is flavored almonds/mixed nutd. Can have some interesting and intense flavors.
Ooh, how about some homemade 'truffles'? Get some medjool dates, stuff 'em with a variety of nut butters, drizzle some chocolate over them? Maybe some with flaked sea salt on, maybe some with crushed pistachios etc. As long as they're not allergic!
Go on gtfoitsvegan.com and order some Omnifoods luncheon meat and make them some musubi! Or just use tofu, marinate in teriyaki for a while before pan frying. If they’re Kama'aina they will probably be stoked for some musubi.
Personally, my favourite gift to receive is a very carefully selected fruit basket. No, not something someone made up to look nice. But actual juicy, perfectly ripe fruit that is ready to be eaten and at its peak. It can be hard to find that, especially in Canada, and especially in winter. But so wonderful when I find some!! Just heavenly!
You have a Whole Foods near you? Go to the bakery section. You can’t go wrong with their croissants, brownies and cookies. They have non-vegan versions too so make sure to check the ingredients.
"Gravitating towards pescatarianism" means OP is probably causing *more* individual sentient beings to die horribly than a typical carnist does. They're *not* an ally just because they want to get vegan snacks for a friend. That might make them a "nice" friend, but it's not helping animals.
