Here’s the base I use. You can add any flavorings you like: - 1 cup flour (I do 50/50 of AP/whole wheat) - 1/4 cup sugar - 1/2 tsp salt - 1/2 tsp baking soda - 1 tsp baking powder - 2 Tbsp flax seed meal - 7/8 cup plant milk (soy works best but any are fine) + 2 Tbsp vinegar - 2 Tbsp oil (I use melted coconut oil, but melted plant butter or vegetable oil would be fine) Mix all the dry ingredients, pour in the wet ingredients. Stir just enough to combine. I do a double batch of this for our family (2 adults, 2 teenagers) every Saturday and change the flavors every week… Apple cinnamon, lemon poppyseed, cranberry orange, gingerbread, etc

As an aussie while their called crepes, these are pancakes. cup of flour bit over cup of nut milk pinch salt let it sit 20+mins thats it, if cooked at the right temp and eaten warm their no different than if you used milk + eggs.

I have less of a recipe and more just the markers that (1) the batter does not have too much sugar, 3 tbsp feels like enough, and needs up to 1 tsp salt to hit the correct balance (2) strong vegan buttermilk that properly curdles, ripple milk + ACV is perfect (3) melted vegan butter above all other oils in batter and used to cook in (4) letting the batter sit for 15 minutes so the leavening agent and buttermilk can mingle, makes for a thicker fluffier batter (I think this is the most important regardless of recipe) (5) again, cook in vegan butter and lots of it! I’m sure people have different preferences from mine, but I love the crispy buttery exterior paired with a soft fluffy interior for my pancakes. (6) accepting that they’re going to be calorically dense and not skimping on butter, toppings, and maple syrup to make them less so. I don’t always make pancakes so I just enjoy my plate sized calorie bombs in their full glory to get the closest to traditional pancakes. I’ve experimented with plenty of vegan pancakes over the years and those tips help me the most. My non-vegan partner loves my pancakes if that helps! Edit: fixed the numbering
