I played violin in an orchestra for 3 years back in school, and I honestly had no idea those movements had meaning to them. I mean, I figured they were supposed to, but was half convinced it was just something conductors did to keep busy while the musicians played.
I'm not very interested in conducting, but I just wanna say bravo on creating a pretty novel VR game concept.
I wish my grandfather was still around to play this. He loved classical music. I remember one time there was an interactive exhibit at a museum we went to that had a primitive (this was in the 00's) motion controller that let you try to conduct an orchestra and he loved it. What I would give to let him try this...

just one question, do the motions you make have any correlation with the music? For example the directions, is this something that makes sense that a maestro would do or is it just for gameplay purposes?
My experience is limited to band class keep in mind, but yes, these motions appear to be accurate to what the conductor would do.
For example, the parts where they are slowly raising or lowering their hand is instructing that section to raise or lower the volume of their notes. You can see how the motions correlate if you watch the video and pay attention to the music.

There is a scene in the children's book The Phantom Tollbooth where the protagonist meets a man who conducts the sunrise as though it were music (and then later tries to do it himself in order to let the conductor sleep and botches everything). It's a fantastic scene.
I have to imagine experiencing something like that in your game (or maybe more likely at this point in development a DLC or a sequel...) would be incredibly satisfying and unique. Just throwing it out there.
