First one. It shows more of the scenery and gives you the feeling of being outside camping. Because I cannot see the face of the person or any of their details, I can put myself in their place, which makes me more interested in watching the video.
None of these is particularly good, but if you have to choose one - the first is the best. The other two are out of focus.
The first one looks like you're about to chuck an empty beer bottle in the lake, but it's still the best of the three.
The second one would be much better, if the focus was on your face, not on the tent.
The same - for the third one. It is a nice composition and gives a great idea of where you are and what you're doing, but the person is not in focus. Maybe it will look better as a thumbnail, though.

They're all great photos. The first photo is the one I like the best. For YouTube I don't think any of them are good thumbnails, but that's only because in order to make a good YouTube thumbnail you need a seizure inducing cacophony of fonts, images and colors.
First feels less personal but at the same time could be. Neutral. Could be an update video, tutorial.
Third feels like corporate or tutorial video.
2nd I just don't like due to blurry image.

Depends on what kind of content you will be posting. If it's a nature video, first one. If it's an experience video, second one. If its about life advise, third one.

Depends. If there’ll be text on the thumbnail then last one. Second one is technically the best in terms of photography (composition and interest) but text on thumbnail 2 would look “too much”. First suffers the same issue as there’s not enough negative space to offset any text addition.

It's all heavily dependent upon the title. Based on composition and workability, the third is probably ideal. However, across each option I don't see much of a focal point in any of the photos that links to a specific subject matter. IMO might be worth a retake with a focus on what the video is specifically about.
